Super Easy Gazpacho Recipe

Now that its summer (okay, not officially until June 21st but it definitely feels like summer), its time to make one of my favorite summer recipes: Gazpacho.  I grew up eating Gazpacho that my grandmother made, and love keeping a batch of it on hand just like she used to.  Its such an easy, healthy recipe to make and quickly pull out of the fridge for easy summer lunches.  I made a batch Monday night, and enjoyed a serving of it for lunch yesterday.

Ingredients:

2 small yellow onions, peeled and diced
1 large cucumber, diced
1 46 oz bottle of Spicy Hot V8 Juice
6 cloves of garlic, minced
4 tbl olive oil
1 tbl dried cilantro
1 tbl dried basil
Pepper and sea salt to taste

Instructions:

1.  Mix all ingredients together in a refrigerator safe bowl.  Cover and let chill in refrigerator for at least 4 hours before serving.  (I prefer to let it chill overnight.)
2.  Before serving, stir soup, and serve with bread, crackers, croutons, or tortilla chips.

    I’ve started throwing together summer salads for dinner. I don’t need extra heat inside my apartment and I can throw in what I want in my salads.

  4. My mom makes this rice salad, and when she does you know summer has arrived. Its random and unlike all the other rice salad recipes you might see. People don’t get it when I tell them how good it is, but once they have it then they are hooked.

  8. Oh this looks great! I am not sure I have ever had gazpacho unless I had it without knowing:) Looks like a great summer side dish to bring to a BBQ or outdoor party:)

  9. I’m a salad girl. I love all of the ingredients in gazpacho, but I don’t actually like gazpacho. I know. But that looks lovely. ;o)

    I like simple things for summer lunches: cheese, olives and crackers, hummus and pita, simple pasta and green salads, that kind of thing.
